CHILI-LIME POPCORN

Makes about 14 cups

Prep time: 5 minutes / Cook time: 10 minutes Egg-Free, Gluten-Free, Nut-Free, Soy-Free, Vegan If you’ve got kids, they’l love seeing this “old-fashioned” way of making popcorn on the stovetop. Fresh popped popcorn is incredibly easy to make; it takes just a few minutes for the oil to heat up and then a few more to pop the kernels. You can just toss the popcorn with salt afterward; however, the chili-lime seasoning in this recipe adds a fun zesty pop (pun intended) of flavor.

4 tablespoons olive oil or coconut oil, divided ½ cup popcorn kernels

Grated zest and juice of 1 lime

1 teaspoon chili powder

1 teaspoon salt

1. Pour 2 tablespoons of oil into a large pot and add 2 or 3

individual popcorn kernels. Set the pot over medium heat, partially cover, and wait for the kernels to pop.

2. When they pop, pour in the remainder of the popcorn, giving the pot a little shake to ensure al the popcorn is evenly coated. Partially cover the pot again. The popcorn wil start popping fairly quickly. Continue cooking until the sound slows to a few seconds between pops. Pour the popcorn into a large bowl.

3. In the same pot, heat the remaining 2 tablespoons of oil over medium heat. Stir in the lime zest, lime juice, chili powder, and salt. Cook for about 30 seconds, then pour over the popcorn and toss well to combine.

4. Store any leftover popcorn in an airtight bag at room temperature. For best quality, enjoy within 5 days.

Mix it up: Here are some other delicious seasoning ideas that can be used with the basic stovetop popcorn method: 1) vegan butter and salt; 2) olive oil, nutritional yeast, garlic powder, and salt; 3) vegan butter, brown sugar, cinnamon, and salt; or 4) chopped bacon and maple syrup.
